Tomi Cellars is the new project from Boyd Shermis and Denise Davis, with a little help from some family and good friends. We're just getting started, but currently have eight separate vintages ageing in barrels. Our goal is to make the finest wines possible from the finest vineyards on the Central Coast of California. We've spent the last two decades learning what it takes to make wines of distinction, wines that evoke place of origin. Wines that we want to drink - and wines that we hope you'll want to drink, too.
Tomi Cellars currently operates out of Imagine Wine in Buellton, California - courtesy of my good friend and mentor, Ross Rankin. Ross has been my primary influence in winemaking techniques and winemaking style, though I've been branching out a bit, beyond even Ross' comfort zone. I've been working the last few years to help Ross make his world-class Imagine Wines and to improve the winery facilites. In the meantime, Ross and his lovely wife, LynDee, have been very influencial and generous in helping us to get our winery, Tomi Cellars, off of the ground.
Tomi Cellars owns no vineyards. We purchase premium wine grapes from several top Central Coast vineyards. Vineyards such as Riverbench (Albarino), Thompson (Grenache Blanc), La Encantada (Pinot Noir), Watch Hill (Syrah), Stanger Vineyards (Tempranillo), Tierra Alta (Syrah, Grenache, Grenache Gris) and Estelle (Merlot).
We're pleased to announce our first bottling! We still have several red vintages aging in barrels, but we now have our 2020 Riverbench Albariño and our 2020 Tierra Alta Rosé of Grenache Gris bottled and up for sale!
If you're in the area, please come on into the tasting room and try them. And inquire about a barrel tasting of our other upcoming wines.
This is just a quick gallery of photos taken over the last two years. I expect to have a full-blown historical blog set up soon that will be updated once a month or so, so you can follow all the fun we're having at Tomi Cellars.
